Rainbow Charcuterie Board

 

I love a good charcuterie board!  It is the perfect way to gather around a communal appetizer and encourage conversation and interaction. It is very versatile and can be made any way you like it, and for me that would be a seasonal rainbow of fruits and vegetables with minimal but high quality cheese and meat. Grab a piece of wood as your palette and have fun!  This is how I made mine....

  • fresh cherries

  • sugar snap beans

  • grape tomatoes

  • roasted red peppers

  • papaya

  • hummus

  • almonds

  • manchego cheese  

  • prosciutto di Parma

  • olives

  • fresh figs

  • hearts of palm

  • nut crackers

No need for a center piece when this is at the table!  All of the different colors in these real whole foods offer different and very important phytonutrients. Make the rainbow happen at your next gathering!  It will be beautiful and nutritious!

  • I use manchego cheese from Spain because it is made of sheep's milk and is easier to digest because it contains the protein casein A2 instead of the protein in cows milk casein A1 which is very hard to digest and causes a lot of people digestive problems.

  • I don't usually eat pork or cured meats, but once in awhile I do have a small amount of prosciutto di Parma from Italy or jamon Iberico from Spain.  These two hams are bred and fed differently than traditional pigs and the meat is very high in omega 3 fatty acids, which on occasions like a charcuterie board are a treat. Just remember, a little goes a long way.
