Salad Pizza

This is a perfect example of how you can change a recipe for a favorite food and transform it into something similar but nutritiously better.  We all love pizza, but this one is made with a rainbow of vegetables and replaces the animal protein with hummus and shrimp. 

The crust is not a main focus of this dish but instead honestly just a way to get as many veggies on the crust and into your mouth!  I try to find sprouted or naturally fermented flatbread when available, because this is a better choice than regular white wheat, but just do the best you can with this since it is not a major player in this recipe.  The hummus, (made from chickpeas in this case), is rich in antioxidants and help hold everything together on the crust.

I made a mixed salad with as many veggies as I had in the frig, and tossed it lightly with a olive oil based dressing.  Topping it with a few grilled shrimp and fresh tomatoes makes for an absolutely beautiful and delicious alternative to pizza delivery. 

Ingredients

  • Flatbread of choice (look for sprouted or naturally fermented if available)

  • Hummus of choice 

  • Mixed Salad made with as many different colors of the rainbow as possible

  • Dressing of choice

  • Grilled Shrimp, diced

  • Cherry Tomatoes, quartered

Instructions

Serves 2

  1. Cut flat bread into desired size rectangles and toast in a 450 degree oven for 4 minutes or until crisp enough to hold the toppings. 

  2. Spread flatbread with a layer of hummus. 

  3. Top with the mixed salad that has been lightly tossed with dressing. 

  4. Top with the shrimp and fresh tomatoes. 

  5. Enjoy!
