Roasted Veggies, Leftover Quinoa and a Fried Egg

I am always looking for ways to repurpose leftovers in different ways. This recipe uses leftover veggies and quinoa and a little tahini sauce and a fried egg and makes a wonderful brunch or lunch the next day. 

Ingredients

  • Any combination of leftover roasted vegetables

  • Leftover quinoa

  • Tahini mixed with water and lime juice

  • Fried egg

Instructions

Mix together quinoa, veggies and tahini sauce. Top with a fried egg with a runny yolk and enjoy!
